Korean Beef Rice Bowl from Luc

What you need:
- What you need:
- 1 ½ pounds ground beef
- 2 tsp sesame oil
- 1 ½ Tbsp minced garlic
- 80g soy sauce
- 20g gochujang
- 3 green onions
- 300g basmati rice
- 30g brown sugar
Creamy Sriracha mayo
- 90g light mayo
- 50g sriracha
- 1 Tbsp lemon juice
- ½ tsp garlic
- 2 Tbsp milk or water
- Salt to taste
Instructions:
- Mix all ingredients for Sriracha mayo
- Rinse rice in a mesh strainer under cold water for 2 minutes
- Add rice to 450g of water and bring to a boil. Once boiling, reduce heat, cover and cook for 15 minutes. Remove from heat and let it sit covered for 10 more minutes
- Mix the ingredients for the beef marinade.
- Brown the beef and add the marinade when it’s about 50% cooked
- Add green onions and let simmer for 5 more minutes
- Add rice and beef to a bowl and drizzle with the Sriracha mayo
**Optional: For an even healthier option, hold the brown sugar and/or add a vegetable. It's good with chicken too!
